My wife is Nigerian and I love her food. The only thing is that the food has so much oil in it! Almost everything has to be deep fried. It's definitely not health. It tastes good though!

Great question! The oil is removed to create a paste that is suitable for frying resulting in a crunchy snack.

Why do you need to remove the oil from the crushed peanuts when you are just going to deep fry them anyway?

But Queen Amina of Zaria (Zazzau) was not North African. Zaria is in Northern Nigeria not North Africa. But I'm sure it was slip of tongue but being where I'm from my ears picked the error up fast.Thanks for the Kuli Kuli recipe! So happy Northern food is still a tad bit appreciated.

Unfortunately there are no substitutes for potash. Potash is available for sale in most West African grocery stores.
